The weather is absolutely amazing here in Scandinavia at the moment, and today it has been seriously hot on the border of too hot for me. When evening comes though, the air cools down and becomes quite pleasant, still I prefer something light to eat. As I was rummaging through the freezer I found a lonely little pork-chop that I decided to make something out of.
I started with finely cutting up two potatoes and throwing them in the hot frying pan with some olive oil, salt and rosemary. Once the potatoes started to become crispy I added the pork-chop to the pan keeping the spices simple with salt and white pepper.
As the pan was frying away I made a small tomato and feta salad, topping it of with olive oil and pepper.
It was a nice simple meal to end the long hot day, unfortunately the pictures didn’t turn out too well, not sure I can blame it on my new phone or not, time will tell.
Sounds like you cook like we do – whatever is around, let’s use it! Is that basil in the window? It is so hot here this week (95 F) that the thought of coolness is enticing. Looks yummy!

I find that it’s the best way of cooking, you never really know what you’ll end up with. And yes, that is basil, I’m doing my best to keep it alive don’t really have green fingers so plants have a tendency to die in my house.
