Lime Chicken with rice and fried veggies

Well, spending time at home also make extra time for cooking proper dinner. Since I have been so busy cleaning all day, I haven’t been to the grocery store thus dinner today was a “what I have in the cupboards” dinner based on a recipe that I found in the paper a while back.

Today I used:

  • Two chicken filets

  • A table-spoon of honey
  • Some soy
  • Lime juice that equals about one lime
  • Cayenne pepper (how much can you handle)
  • Salt

  • Red pepper
  • Half a leak

  • Rice

I had to start with defrosting the chicken since I buy chicken filets by the bag. While that was working away in the microwave I mixed together the marinade. Just take the honey, soy and lime juice and mix them together, then add cayenne and salt to taste. The stuff

Then rub the chicken with the marinade and put it in the oven, preferably the oven has been pre-heated to 225 C, where it needs to hang out for about 20-25 minutes depending on the size of the chicken.The Veggies in the Pan

Boil the rice as per the instructions on the package, and then pull out the frying pan. The original recipe says leak, red onion, broccoli, red pepper and garlic. I only had red pepper and leak, so that it what it had to be. Just fry them for about five minutes and then sever together with the chicken and rice, yum!The finished disch
