All I do is eat 

Getting up at 7am to be somewhere at 8am is totally killing my groove. Still, I can be like a proper famous blogger and tell you that I’m working on a project that I can’t tell you anything about, and it’s totally killing my groove. I get up, end up at work, eat lunch…

Has totally fallen for this Apple and bacon salad from Salads & Smoothies (or is it the other way around?

Then I work some more, eat fruit, snacks and drink way too much coffee and not enough water (even if I try to remember by putting it in my calendar).

Today after work I went straight to the gym, and a proper blogger would’ve taken awesome toilet selfies in gym clothes instead I have a pic of the chocolate I picked up on my way home from the gym. You can see my yoga pants in the background. 

Even though I now know that my mum can handle the angry like on Facebook, this wasn’t, as I might have said, my dinner for the evening. Instead I spent hours slaving in the kitchen making fresh pasta.

Hahahah, no! I bought that in the same store as the chocolate, together with one more pack that I can have for dinner tomorrow. I miss my own home 😦

Well, 10:30pm and I’m totally hitting the sack. Another long and crazy day tomorrow with morning plans, workshop at work, afternoon plans and I believe, a great longing for vacation…

Travel not always required

Since I’m still in the honeymoon phase at my new job (please let it last forever) Monday mornings aint that bad. A tad bit tired after arriving home late last night and not being able to sleep straight away, still fun to go to work.

Haven’t been cooking that much lately (for recurring readers, you might have noticed) so I had no food to bring with me to work today, thus I had to go out for lunch with a couple of my collegues. Can’t really go wrong with Cesar Salad.


Then, for some reason I’m not completely clear about, there was ice-cream in the office (again!) today. It tasted amazing.


Not working overly late I decided to go do some shopping, it was time for a new toy! Just so that you know, it’s my sisters fault that I bought it, she has one and let me use it. It’s just too much fun and I’m sure that my home will become more organized with one of these in here.


So, you don’t have to go travel to eat good food, nice ice-cream and do random shopping for things that you don’t really need, you can do all of that right at home 🙂

The Swedish goddess little meal of luxury

Even when you are on a budget, you deserve a little bit of luxury every now and then, when I arrived to the grocery store at the train station today and saw their discounted meats I decided that this was one of those days. They had real nice pork meat on sale, as well as bacon and then some other stuff accidentally fell into the shopping basket as well.The food

The meal itself became pork medallions with fresh pasta filled with cheese and spinach with a green salad on the side. Super quick and easy so if it wasn’t for the price (about 35sek per serving) this would the ultimate Swedish Goddess dish.

Starting with making a salad by pouring the bag of pre-washed lettuce mix into a bowl, cut some cucumber and tomato to add to it. Top of with some salt, pepper and lemon olive oil.

SaladBefore cutting the meat, I put a pot filled with salted water on the stove so it could start preparing for the boil. Then I pulled out the chunk of meat, time to see if I did the right estimation in the store, I was hoping for four servings;

Loads of meatI got five! Yay, me. Once the meat is cut, fry it quickly in a hot pan, to long and it gets dry, to short and some people freak out about the pinkness. Hopefully, the bubbles have now arrived in the pot and you can pour the pasta in, usually fresh pasta needs between three and five minutes. Then hep, ready to serve;

I promise you can’t live without this information!

I know that the blogging speed and presence have been a bit low lately, I blame it on work and school, so I thought I would give you some real interesting stuff right here and now, just so that you wont miss me too much.

Check out the lunch me and my friend had today, we couldn’t decide on what pre-packed salad we wanted so we got one of each and mixed them up, pretty smart, right?LunchI hope this will tide you over for now, because I can’t promise that the blogging speed will increase as my studies kind of require me to study even when not in class…strange how that works!

The Swedish Goddess not so affordable breakfast

When you don’t have to rush out the door in the morning, making a nice fruit salad must be one of the best things ever. This specific fruit wasn’t the cheapest due to a couple of reasons; firstly I didn’t purchase it in the cheapest store in town, secondly I didn’t check the receipt until I got home so I didn’t realize that the girl behind the counter charged me for ecological fruit rather than normal.

Well, since I already bought the fruit I figured I might as well eat it. I used one banana, one apple, one pear, one orange and one grapefruit (I ate the rest of the grapefruit last night and found one lonely one left over at the bottom of the fruit bowl). All this fruit is enough for two morning servings of fruit, I think that most people probably eat it all in one go. So my price for this mornings breakfast was 9kr (€1.05 or $1,37).

Thailand II – The Food

One thing I have to point out about Thailand is that they have absolutely amazing food, so I will give you a show of some of all the amazing food that I had during my two weeks there!

We had lunch more than once at the Veranda Lodge, which is right on the beach and have great food and good service (most of the time). I loved their salads, so here is the Beef, Tuna and Bacon salads that I tried – yum!

Beef Sallad (3) Tuna sallad Bacon SalladWho would have thought that a small place on the other side of the tracks in Hua Hin would have some of the best sushi I have ever had? Not me at least! They did though and I wish I could be back there eating some more of it. We went there twice during my stay and it was as good both times, and it looks great as well. The place is called Sakura Sushi and is well worth a visit if you ever happen to be in Hua Hin.

More sushi Sushi Dragon rollAfter the salads and the sushi I will admit that we had some Thai food as well, I’m afraid that I can’t remember the name of this place. It was right in the bar area and had great service with cheap prices. I tried a whole bunch of dishes, just because I could.

The CornerThen there was the Thai beef salad, the Thai omelet (not that great though), and last but not least the whole fish with lime sauce – oh my god, that was heaven. Some of these places, I do regret that I didn’t write down the names so that I could share them with you, however you tend to be a bit caught up in the moment when on vacation and just enjoying life.

Thai foodThai omelettFishWe did go to one place where I loved the way the food was served, and tasted great, that I did take a picture of the front of the menu so I would remember it. It is called Cantaloupe Island and they have jam sessions in the evenings, with a speaker system set up outside so you can sit there and eat while watching the band through big glass windows.

KebabsAnd they tasted like heaven! Unfortunately this place had more like European prices rather than Thai prices, so not a place that you go to eat every day.

I will admit to a few late night visits to McDonald’s, I didn’t take any pictures of them though, which was a bit silly as I could add them to my McDonald’s pictures from around the world collection. I did have lunch at Subway one of the days though, and that of course I took a picture of (why on earth did it become fashionable to take pictures of everything you eat?).

Salmon and fennel gratin

This dish seem to be a hit with the mothers, I made it last week for my favorite Latte Mum and mentioned it to my hostess that was keen for a sample.

* 800g boiled cold potatoes
* 300g cold smoked salmon
* 2 fennel bulbs approx 250g each
* grated cheese
* 2dl cream


Chop the fennel and fry in butter for a few minutes.


Slice the potatoes and layer potatoes fennel and salmon in a oven proof dish.


Pour over the cream and cover with the grated cheese. Put in the oven for about 15 minutes, 225 celsius.


Serve with a green salad.


Yum, yum!
